Paradise Bakery Sugar Cookie

(picture care of Noelle O, mine didn't turn out as cute as hers)
Warning: Do not make these cookies. They have everything in them your diet tells you not to eat and yet they are so melt in your mouth delicious you will eat them anyways and hate yourself in the morning. They should be called One night stand cookies. jk, sorry Mom.

Paradise Bakery sugar cookie

1 cup granulated sugar
1 cup powdered sugar
2 cups shortening
3/4 teaspoon vanilla
1 large egg, beaten
4 1/3 cups cake flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
Plain or colored sugar, for decorating

Heat oven to 375 degrees.

In a medium bowl, cream together sugars and shortening using an electric mixer. Mix on slow speed 30 seconds, then scrape down the bowl with a spatula. Increase speed to medium and mix for 3 minutes.
Slowly add vanilla and beaten egg while mixing.
In a separate bowl, combine cake flour, baking soda, baking powder and salt. Gradually add the flour mixture to the creamed mixture, mixing on slow speed until just blended. Do not over mix.Scoop with an ice cream scoop and roll in sugar. Place on baking sheet. Flatten slightly with palm of hand.

Bake 9 to 10 minutes.

Cookies are done when small cracks appear and are pale golden. Ideally, do not let edges brown. Makes about 3 dozen cookies.

My friend Noelle posted this recipe and I've been dying to make them ever since I bought some at the Beehive Bizaare that she made, that's right I spent good money for these babies, they are that good.

Seriously Don't Make them!

Shoot! Now I'm going to have to make them today. And I just went running, so it won't even count. I did make your cucumber feta salad Sunday and it was yummy!

Yeah! This recipe is posted. I hate you and love you for bringing some of these over.

Does anyone have the recipe for "No Bake" cookies. I remember Mom making them all the time. And Chris. I remember I love them, but I have never made them. Any One? I know it uses oatmeal and chocolate.

Oh baby, don't get me started thinking about these cookies.
Don't forget-USE CAKE FLOUR! even if you have to go to the store, it will make or break the cookies.

These cookies look so delicious, I bet I do not even have a chance with them. I would have to call them, 'Out of my league' cookies.

These cookies are divine. I read the recipe not too long ago. Figured out that I had all the ingredients and went to work. WOW! Thanks to my SIL Cate for hooking me up with this site and her fabulous family for sharing their recipes!

Love the recipes. Can they be printed off the blog? I guess I can copy them but I'm lazy. Dad's favorite is sugar cookies.

Yikes! I made these, but they didn't turn out like the picture. They taste great if you don't think about all the shortening you put in them. I'll try again so I gat them looking prettier.

I found this recipe on Pinterest. I just whipped up a batch. Is the dough suppose to be so DRY and thick or did I maybe add too much flour? I just got the first batch out. They are falling apart when you pick them up. :( Taste good though!!

Yeah, I didn't use cake flour. They're good, but they're a little dry. I didn't know there was a difference between all-purpose & cake flour...
Still decent tho. But kinda crumbly.

I just mixed these up and wish I had read all of the comments first. They are too dry to even handle. Very disappointing b/c they were for Valentines Day and a treat for friends. :(

Any alterations for high altitude?

@Heather - I *did* use cake flour!

These were wonderful! They are a staple in our family!

If you don't have cake flour you can use regular flour however the measurement is different... for every 1 cup of cake flour you use 1 cup of all purpose flour minus 2Tbl. Just made these with all purpose flour and the right measurement and they turned our perfect!

I've made these several times and they have come out perfect each time. Everyone here loves them and can't stop eating them. I put almond flavored icing on them. I always VERY gently transfer these from the oven to a cooling rack with a VERY thin spatula. Once they have cooled I'm able to pick them up and spread icing on them. They haven't fallen apart on me yet. maybe others are not leaving them to cool long enough? Or letting them bake long enough? Everyone's oven is different and I have to turn mine down a bit and leave them in a tad longer.

I know I'm late to the party, but Paradise Bakery has always had my FAVORITE cookies, and never before have I found a recipe that was even close to them. This is it! Thank you!

Also, I'm a butter girl, too, but I use the Spectrum Organic, non-hydrogenated shortening to feel better about stuffing my face with these.

My dough was also pretty crumbly, which isn't unusual at my high altitude, so I added about a teaspoon of water and mixed a little more and it came together beautifully.

Thank you again!!! <3
